Heartland™ Prime Select Roasted Sweet Potatoes
Ingredients:
- 2 Heartland™ Prime Select Sweet Baking Potatoes, peeled and cut in 1-inch cubes
- 2 medium onions, cut into cubes
- 3 tablespoons olive oil
- 1 teaspoon thyme
- Salt and freshly ground black pepper, to taste
Directions
Heat oven to 425°F. Toss all ingredients in a shallow medium-sized baking dish.
Cover and bake 30 minutes.
Uncover and bake 20 minutes or until potatoes are tender.
